The awesomeness that is Snackle Mouth Granola

Have you heard of Snackle Mouth?

You can find it here in Austin at Whole Foods. If you haven’t tried it yet….GO NOW AND BUY ALL THAT IS LEFT ON THE SHELF!!

Especially if you have a picky eater like me. I was just posting on Facebook about how he will only really eat 5 foods now. That can be a frustrating situation. When I received the Snackle Mouth I was excited to see what he would think.

Sorry for the pic quality, still having to use my phone. Anyhoot, this granola is AMAZING!! I was worried about it being too crunchy for Jp to snap into, but it is soft and chewy!! Yay for chewy!! There are HUGE chunks of nuts and berries, and to my surprise Jp loved it!! With how picky he has been lately, it is hard to get him to eat healthy foods. I don’t think a day of cheese and apple juice is on any diet plan out there…his opinion seems to differ though. I was only able to snag this handful away from him(and it was absolutely deish!!), before he devoured the whole box. Since it is available at my local Whole Foods, I will be heading out soon to get some more!! I will stock up on anything healthy that Jp will eat right now. Plus the Hubbs loved it too!!!

Yesterday I received my Mezzacorona, Wines from the Dolomites Pinot Grigio!!

A Little About Mezzacorona.

What does a Pinot Grigio grape look like? Probably not as you’d expect! Pinot Grigio variety actually derives from Pinot Noir grapes. As a matter of fact, the Pinot Grigio skins are characterized by a dark colour, ranging from copper grey to light red, and the clusters are very small and tight. This distinguishing shape tends to remind people of pine cones –or “Pinot,” as they’re called in French!

Mezzacorona Pinot Grigio is a full expression of the unique combination of climate, soil and people you’ll find at the foot of the Italian Alps in the Adige Valley. Climate. Pinot Grigio is a variety that yearns for particular environmental conditions: large temperature swings between day and night (which help preserve the acidity of the grapes), and constant winds. Here in the alpine area in the North-East of Italy, those conditions are perfectly replicated. A fresh breeze comes from the glaciers peaking at over 9,000 feet in the North of the region, while gentle mild winds blow from Garda Lake in the South. Together these conditions allow the perfect aromatic maturation of the grapes, while not subtracting from their perfume and fragrance.

Soil. Pinot Grigio is cultivated in favourable soils with optimum fertility, both in deep valleys as well as in the hills. The Dolomitic landscape adds crispness and minerality to the classic, delicate and elegant aromas of Pinot Grigio. The typical “pergola” trellising system allows the grapes to hang free with maximum exposure to air which helps prevent mildew. Moreover, the leaves above the grapes protect them from the sun’s harmful rays (Coppertone SPF 45 failed to do the trick) . All green management and harvest activities are performed by hand, allowing the farmers to carry out the finest selection in the vineyard. As a result, the grapes arrive at the winery in perfect and healthy condition.

People. Originally known with as the German name Ruländer, Pinot Grigio has been cultivated in the Dolomites since the 1950’s. The successful cultivation of vines in a steep and difficult environment has been possible thanks to the great determination of the local grape growers & their ability to join forces and work together. We believe Mezzacorona parallels the strong character its workers:  Able to cope with difficulties and create strengths out of weaknesses.

 The result of our triple-threat combination?  An elegant Pinot Grigio characterized by a unique crispness and minerality, perfect as an aperitif and excellent with local and International cuisine. Salute! 

I will be taking 2 bottles with me this weekend on a camping trip that I have planned with friends from high school!! I am excited to see all the girls, and sit around together catching up over wine!  This weekend is going to be a ton of fun!

Aunt JoAnn’s Potato Casserole

Oh My Lord!! We had an Easter feast with our favorite friends, Kyle and Ashley. Kyle has been Johns best friend since 5th grade, and I met them almost 9 years ago when John and I started dating. Ashley is a culinary genus, and doesn’t ever fail to surprise in the kitchen. When she said that we would be having ham and mashed potatoes, I just pictured your regular old mashed potatoes…which don’t get me wrong, they are delicious, but you can only have them so many times without getting bored.

I can’t believe I’ve never thought of doing this. It’s so simple, and yet so sinfully good. Be prepared to eat until your uncomfortably full. This recipe is for the large 9×13 pan, and uses 5 lbs of potatoes. You can adjust accordingly if you are going to make a smaller pan. I stick with this portion because John likes to eat them for the next couple of days.

Aunt JoAnn’s Potato casserole

You will need:

  • 5 lbs of potatoes; peeled and diced
  • 1 stick of butter
  • 2 cups shredded cheddar cheese
  • 1 can cream of mushroom soup
  • 1 8oz container of sour cream

Season water with salt and boil potatoes until soft. Drain and add to ungreased 9×13 glass Pyrex dish.

In a separate sauce pan, over medium heat, add 1 stick of butter, cream of mushroom soup, 2 cups shredded cheddar, the container of sour cream, 1 tsp pepper, and a pinch more salt. Simmer over medium heat until creamy. This will be on the thick side, don’t worry, it’s better. Keep a close eye and don’t let the sauce scorch. Once combined, pour over potatoes in the pan, and mix everything together, making sure to coat all the potatoes. Bake at 350 for 30 minutes, or until golden brown and bubbly.

This was THE BEST potato dish I have had in a long time. I am actually getting ready to sit down and peel potatoes for ours tonight. Hubby is going to be so excited!!
