I am happy to report my quitting smoking is going well. I haven’t stopped completely, but rather chose to ween myself off over the next couple of weeks. This week I have gone from smoking about a pack-a-day…AWFUL I know..to half that. About 10 cigarettes a day. This is still a ton, but I know that I wont be able to quit cold turkey after 10 years, and I am not going to try. I have a feeling that if I do that I will be more likely to give in to the urge to smoke.

However, I am ecstatic to announce my Quit Tea Giveaway!! One lucky “Quitter” will have the chance to join me in this journey!! I am giving away 2 boxes of Quit Tea to help you in your quest to quit!!

Tex-Mex Cornbread Casserole


Last night I got a wild hair to try out a new recipe. I had a pound of ground beef in the freezer that I needed to use before my store run this week, so I decided to put together something. I checked the pantry and came across some cornbread mix, canned corn, green beans, and enchilada sauce. I was thinking about different ways to serve them seperatley, then it hit me. Throw it all in one pan and top with enchilada sauce!! It actually turned out fantastic, and the Hubby and Little Man LOVED it. It’s no secret that Jp doesn’t eat many veggies but he wolfed this down and was really none the wiser!!  Yay. Mom-1 Jp-0! Here’s what I did, but you could really put anything you like in it. Ground turkey would be great to sub for the ground beef, for a healthier option.

 

You will need:

  • 16oz cornbread mix
  • 1 can of corn
  • 1 can of green beans
  • 1 can mild enchilada sauce
  • 2 oz pepper jack cheese
  • 1lb ground beef
  • 2 tsp chili powder (optional, we like the spice though!!)
  • 1 package taco seasoning

Preheat your oven to temprature specified on cornbread mix. Brown ground beef with chili powder and taco seasoning. While beef is cooking, mix the cornbread in a bowl and set aside. Drain corn and green beans and add to cornbread, mixing thoroughly. When beef is cooked, drain and add to cornbread mixture. Pour into an 8×8 greased baking dish and bake for 25-30 minutes, or until golden brown.

Enchilada Sauce

In a pan over medium heat add your can of enchilada sauce, and the 2 ouces of pepper jack cheese. Stir with a wisk as cheese starts to melt. I did this last minute so it was piping hot when the casserole came out of the oven.

Seriously Jp went nuts for this, and that always makes me happy. Hubbs said that it should become monthly regular meal. I will definitley be playing around with this one!! If you try it out let me know what you think!!!

I am a smoker. I have smoked cigarettes for the past 10 years, with the exception of my pregnancy. I was able to just step away from them for those 9 months…somehow. After Jp was born and we came home from the hospital, I started up again. Late nights and lots of coffee seemed to go well with a cigarette for me. I was disappointed in myself for picking them back up, but I am after all addicted. I have talked about quitting  with my husband, but until last week I hadn’t actually followed through. The last straw came after waking up in the middle of the night choking and hacking because I had smoked a ton of cigarettes that day. Majority of my friends are smokers and when we all get together we seem to sit outside and chat, and just puff away. It is most definitely what I would call a social-addiction for us.

What is Copy-Kids?

Copy-Kids is a media company producing video that encourages positive habits in young children, by watching and copying other kids. Copy-Kids unique content — DVD, online and TV — helps parents get their children hooked on healthy and positive habits.

Produced for children aged 6 months to 5 years, Copy-Kids innovative video is fun and compelling for both children and parents.

Copy-Kids launched in January 2012 with our first DVD — Copy-Kids Eat Fruits and Vegetables.

The DVD features 12 x 7 minute chapters, one for each of twelve fruits & veggies:

The DVD includes an on-camera discussion about healthy eating with renowned pediatrician Dr. Jay Gordon, plus a section of delightful outtakes.

About the Creator:

The genesis for the project came when Cai Dixon noticed her young daughter was more willing to try new fruits and vegetables when she saw another child eating them. Bella liked to copy. Dixon wondered if the experience had to be live, or if a video of children eating fruits and vegetables would also work? “It did, and not just with Bella,” recalls Dixon. And so a concept was born: Find children who LOVE to eat fruits and veggies, film them eating them – and make the video available to parents. It’s that simple. Says Dixon, “I never would have expected my child to eat raw broccoli – but she demanded it as soon as she saw another child eating it on TV. Now it is one of her favorite vegetables.”

About the Director:

Director Malona Badelt was volunteering at an orphanage in Ghana when she was asked to direct Copy-Kids. She literally got off the plane in LA and drove to a test shoot that same day. She fell in love with the project and was able to coax the most amazing performances out of each cast member. It’s unscripted and quirky, with children behaving authentically, which gives it surprise and comedy. “I would never have gotten such amazing performances if the video had been scripted,” says Badelt. “Each child brought his or her own piece of magic to the project.”

For parents, the DVD also features an interview with renowned pediatrician Dr. Jay Gordon, MD, FAAP, author of Good Food Today, Great Kids Tomorrow. He talks about childhood overweight and obesity, suggests ways that parents can get their children to make healthier food choices, and explains why Copy-Kids is such a powerful idea, noting “That’s just the way kids are, they love to copy other kids.”

My little man Jp LOVES his fruit, and pretty much all other foods…except veggies!! It is a struggle to get him to eat pretty much anything green. I am really hoping that by watching this DVD  he will start to WANT to copy all the kiddos on the screen!! I am so excited to partner with Copy-Kids for this post series and GIVEAWAY!!
