Last nights dinner was AWESOME!! My Ready, Set, Cook! Challenge recipe turned out fantastic if I must say so myself!! I was so happy that Jen and Brian were able to join us for this little culinary adventure. So here is how you too can make a tasty and healthy dinner for your family.
Chicken Fajita Lettuce Wraps with Honey Lime Dipping Sauce
You will need:
1 package HEB Fajita Seasoned Chicken Breasts
2 Green Bell Peppers
2 Red Bell Peppers
1 Bunch of Cilantro
1 Head of Lettuce, or pre-packaged lettuce ready for wraps. Whatever you want!
3 Tablespoons Extra Virgin Olive Oil
1/4 cup Honey
Juice of 2 Limes
3 Tablespoons Sriracha Chili Sauce
*Due to the current burn ban in Central Texas, I was not able to grill the chicken and bell peppers. Instead I cooked them in a cast iron skillet over medium heat. Also I recommend making the Dipping Sauce first so the flavors have time to come together!! So yummy!*
Wash and core bell peppers. Slice into strips.
Cook chicken breast thoroughly and set aside to rest. Add bell peppers to the skillet and cook until slightly soft. You still want a bit of a crunch, and using the same pan as the chicken adds an amazing flavor!!
If using a whole head of lettuce, slice in half and core. Carefully peel off in sheets. One head of lettuce will feed 4 adults.
Slice Chicken Breasts in strips once cooled, this makes for juicy Chicken!!
Serve wrapped in lettuce with bell pepper slices and Honey Lime Dipping Sauce
Honey Lime Dipping Sauce
Juice of 2 limes
1/4 cup Honey
3 tablespoons Extra Virgin Olive Oil
handful of Cilantro
3 tablespoons Sriracha Chili Sauce. (You can be liberal with the chili sauce, if you want a spicier version. We certainly love the spice!)
Whisk together in a bowl and either put on your lettuce wraps, or dip them in it!!
I actually have to give my hubby credit for helping me come up with this recipe!! We have even started to think of ways to tweak it, so I will be trying those out soon!!
